Hello
When partner opens strong 2, we play 2 as any strength waiting bid, 2M being 5+c natural positive with 2/3 top honors, etc. If responder is bust, his negative would be his rebid (cheapest minor or 3N over 3).

How is best to handle the Interference over responder's bids :
2 - (p) - 2 - (2 or 3 or any other bid)

and over natural positive ?
2 - (p) - 2 - (2)

Thanks

We play that if there is a direct bid over a 2 opener, double shows a bust and pass shows a game force (doesn't promise the worlds fair though).

You can play the same thing here where the 2 bidder can pass (forcing) and responder bids as above. For the 2 opener to pass they would likely have a normal 2nt rebid without the interference but if they bid instead it should be natural and game forcing with the more shapely ones.

In the second case I would just bid naturally with double by opener showing a 2nt rebid without heart support and pass forcing for responder to do whatever (double = min for the 2 bid?). A rare enough auction that we haven't dotted all the t's or crossed the i's.
